Memorial Day Pancakes

Today I want to take a moment to send our prayers to all those affected by to storms in Oklahoma.  And, we are praying for all our Texas friend’s and family to stay safe today!

Sometimes ideas for my website come from my children.  This morning Andrew asked me if we could have pancakes for lunch!  Since Memorial Day is coming up, and seeing all the out-pouring of support and love from our fellow American’s to all the families in Oklahoma, I decided that today was a great day to celebrate America!

How to make Memorial Day Pancakes:
Budget Savy pancakes in a Box
Food Coloring
Melting Baker’s Chocolates

After you mix your pancake mix according to directions, split it into two bowls, add your food coloring to one. Once they are finished, stack and cover with your favorite chocolates!

Mother’s Day

This may be my favorite holiday of the year.  It usually means I get lot’s of homemade things from my kiddos.  I have been creating a wall of fame and displaying some of their art.  This week I got to add my Mother’s day gifts!

And this picture was made at school by my oldest.  He said he gave me tall boots, pink lipstick and a pink hair clip.  He did get the blue eyes right!  (so glad he is paying attention) My favorite part is that he says that I make the best cupcakes, that he loves that I take him to the park, I make him feel special, and I’m as beautiful as a flower.  Now, he also says that My mom helps me build with my Lego’s and that my mom is the best at building Lego’s.  A wonderful laugh for me and his dad to have.  It seems that dad can build ships and planes, and momma, well, I am a little challenged in that area.  However, my sweet little boy feels that I get picked on because I can’t build very well.  Therefore, he decided to encourage me, rather than cut me down!!  The best mother’s day ever. (at least until next Mother’s Day)

Dessert on the Fly

We had a very busy weekend.  From our friend’s 2 year old birthday party to dinner with new friends, and also business acquaintances.  I was on short notice plus short of time to prepare dinner at our home.  Have no fear.  This dessert is super easy, super tasty, and super springy!

To make this scrumptious cake:  Buy an angel food cake loaf, cut it in half, ice it with whip cream, and top with strawberries, drizzle some chocolate (ooh yeah!), pace the top half on top and drizzle chocolate on top.  I used sugar free everything and added some whip cream before serving!!!  Delicious and cost about $2.50 to make.
